The sun is beginning to warm us, the birds are migrating and nurturing little ones, flowers are blooming, we’re almost through the pollen season (quite a moment to celebrate), and plants and veggies in our gardens are growing.

May also offers us the gateway to summer, and that always makes me hungry for new and inventive ways to enjoy watermelon. There are so many ways to enjoy watermelon – in salads, on the grill, and of course, just sliced cold and enjoyed with a seed spitting contest by the kiddos.

I recently came across this recipe, which can be adjusted for a non-alcoholic version – Watermelon Tequila Skewers. Easy, fast, and a little something different. This refreshing creation was posted by Sonja and Alex Overhiser. I hope you’ll give it a try.

The month of May also gives us an opportunity to stop and appreciate the men and women who have made the ultimate sacrifice with their lives so we can enjoy the privilege of living in the best country on the planet – Memorial Day, May 30th. This holiday is usually celebrated with the sight of red poppies, flags waving, and family and friends firing up the grill.

The tradition of wearing the red poppy was inspired by two poems – one written by John McCrae, a Canadian soldier and physician, and another written by Monia Michael, an American professor. Ms. Michael came to be known and honored as “The Poppy Lady” thanks to her moving poem, “We Shall Keep the Faith.”

As we get ready to usher in the lazy, crazy days of summer, my wish is that you find many opportunities to stop, unplug, and sincerely appreciate all that we enjoy in our very own ways, including celebrating the braveness of our military as they protect us and our way of life.
